500g Salmon Fillet
1/3 cup honey
1teapoon cracked black pepper
2 teaspoons of grated lime zest (rind)
3 tablespoons lime juice
2 cucumbers, thinly sliced
2 tablespoons fresh dill sprigs
Remove skin from fillet and cut into 3cm wide pieces.
Place honey, pepper, lime zest and juice into a large frypan over a medium to high heat.
Allow the sauce to simmer for 2 minutes.
Place salmon in the pan and cook for1 minute on each side until seared.
Plate up: Pile the cucumber and dill in serving bowls.
Top with pieces of seared salmon and drizzle with honey sauce and pan juices.
